Dragon fruit, also known as Pitaya, Pitahaya and Strawberry pear is a type of cactus, which is grown in Southeast Asia, Mexico and parts of Central and South America. For me personally this is the most stunning fruit I’ve ever seen! There are three types of Dragon fruit… One is with yellow skin with green scales & white fruit flesh with black seeds. The other two are with bright pink skin with either white and gorgeous pink-purple flesh with black seeds (LOVE it!).
Beside being so incredibly beautiful, this unique tropical fruit has so many health benefits. Dragon fruit is high in fibers and antioxidants. It has low cholesterol and is full of Vitamin C, which will boost your immune system. Moreover, it can improve your metabolism and digestive system. Sounds good, right? : )

Serves 1
1 pink dragon fruit with pink-purple fruit flesh
1 banana
2 tbsp. chia seeds, soaked
coconut water to adjust the consistency

1. Put all ingredients in a high speed blender.
2. Blend until smooth.
