Hey, loves! Our latest obsession have been all kind of fresh, delicious green salads. So, today inspiration is this lovely Spring lettuce salad with avocado, cherry tomatoes, Kalamata olives and hemp seeds. It’s simple, yet incredibly tasty and one of our favorite quick salads this season. Moreover, we are so lucky to eat delicious homegrown lettuce from Grandma and Grandpa’s lovely vegetable garden. Yeah! And to be honest, we already can’t wait for all the insanely yummy summer treasures in their garden : )
Ingredients for Spring lettuce salad with avocado and cherry tomatoes:
5 – 6 lettuce leaves, shredded
1/2 avocado, sliced
3 – 4 cherry tomatoes, halved
4 – 5 Kalamata olives
Extra virgin olive oil
Freshly squeezed lemon juice from 1/2 lemon
Himalayan salt to taste
Instructions for Spring lettuce salad with avocado and cherry tomatoes:
1. Mix together lettuce, cherry tomatoes and avocado.
2. Drizzle over the salad with extra virgin olive oil and freshly squeezed lemon juice. Season with salt to taste.
3. Garnish this simple, quick and super easy Spring lettuce salad with Kalamata olives (or your favorite olives) and hemp seeds.
