Hey, loves! With summer veggies in full swing, we can’t get enough of the endless combinations for refreshing salad recipes. And now, when we’re in my lovely hometown, we are sooo happy to enjoy my Grandma’s amazing homegrown vegetables. So, today inspiration is this simple, healthy and incredibly tasty Tomato Avocado Salad, made with the most flavorful and juicy tomatoes I’ve ever tasted in my life. My Grandma’s amazing tomatoes : )
But, let me first tell you a little bit about Grandma and her enchanting vegetable garden. When I was little, my brother and I used to spend the summer vacations with our grandparents. This is such a sweet memory from my childhood. We played all day long outside and enjoyed the most delicious homegrown fruits and veggies. Tomatoes, cucumbers, zucchini, eggplants, green beans, red and green peppers, figs and grapes… the abundance of these fresh summer beauties has always filled my heart with happiness. And now, Grandma is already 89 years old, but she still grows these treasures in her garden. So proud of her!

Cucumbers and red peppers are about to grow up.
Grapes and figs are usually ready in the end of August. And they are sooo insanely yummy!
Grandma also grows pumpkins in her garden. They become sooo huge until they are ready for harvest in October.
I’m so happy that our two monkeys just l-o-v-e playing in my Grandma’s cozy courtyard. They absolutely adore watering and picking the summer treasures in her garden. This is so inspiring for the little kiddos : ) And those red giant tomatoes are the perfect base for our simple and refreshing summer Tomato Avocado Salad. So, let’s check out the quick and simple recipe together!
Ingredients for Simple And Delicious Tomato Avocado Salad:
Serves 1
1 giant red and juicy tomato, sliced
1 ripe avocado, sliced
3-4 olives, pitted and sliced
fresh basil leaves
hemp seeds
2 tbsp. freshly squeezed lemon juice
a pinch of Himalayan salt
Instructions for Simple And Delicious Tomato Avocado Salad:
1. Slice the tomato and place the slices in a serving plate.
2. Cut the avocado lengthwise around the seed. Open the two halves and gently remove the pit using a spoon. Slice the inside of the avocado halves. Detach the slices from the skin by gently turning the skin inside out.
3. Arrange the avocado slices on top of tomato slices and drizzle with freshly squeezed lemon juice.
4. Sprinkle with Himalayan salt to taste.
5. Garnish with sliced olives, hemp seeds and fresh basil leaves.
