100 % Vegan Basil Pesto: Flavorful, Nutritious, Versatile
All you need for this wonderful green heaven is fresh basil leaves, raw pumpkin seeds, extra virgin olive oil, Himalayan salt and a magical secret ingredient… nutritional yeast.
Blend them in a food processor and you will have the most delicious homemade vegan and dairy-free basil pesto!
As you probably know, nutritional yeast, has a great cheesy taste, therefore is a great substitute for Parmesan cheese. On the other hand, raw pumpkin seeds are very nutritious and give an irresistible nutty flavor to the pesto.
Beside being amazingly tasty, this healthy green spread is super versatile. You can spread it on a slice of sourdough bread or use it as a topping of yummy vegan pasta, burgers or pizza, sauteed potatoes or rice, and almost every other dish, that you create in the kitchen.

2 cups fresh basil leaves
1/2 cup raw pumpkin seeds
4 tbsp. nutritional yeast
4 tbsp. extra virgin olive oil
1 tsp. Himalayan salt
Instructions for Super Duper Vegan Basil Pesto (Easy 5-minute Recipe):
1. Wash carefully the basil leaves and rinse them well.
2. Place them in a food processor along with the raw pumpkin seeds.
3. Blend until you get the required consistency.
3. Place the pesto in a bowl, add extra virgin olive oil and nutritional yeast and stir well.
4. Put the pesto in a jar and if you are patient enough, store it in the fridge 24 hours before using.
