With summer in full swing, we are so happy to enjoy all sorts of fresh summer salads. One of our top salads for this season is Vegan Caprese Salad with Tofu. We all just love it at home, especially the kids.
Using tofu instead of the classic mozzarella, makes the perfect Caprese salad vegan version. We also need some juicy and flavorful tomatoes, a handful of fresh basil leaves and extra virgin olive oil. Et voilà, the result is absolutely delicious!
In fact, we always have a homemade tofu in the fridge. When you are a huge fan of this yummy soy cheese (like all four of us), it’s better to make it by yourself instead of buying it from the organic stores. Happily, Toni makes the most delicious tofu in the world. And I hope he’ll be able to share his recipe for this amazing vegan cheese soon on the blog.
Ingredients for Vegan Caprese Salad with Tofu:
Serves 4
4-5 medium juicy and ripe tomatoes
1 package firm tofu
1 handful of fresh basil leaves
Extra virgin olive oil
1 tsp dried basil
Salt to taste
Directions for Vegan Caprese Salad with Tofu:
1. Cut tofu lengthwise into halves, then cut each half into thin equal slices. Season with 1 tablespoon extra virgin olive oil, 1 teaspoon dried basil and salt to taste.
2. Put the tofu in the fridge for at least thirty minutes.
3. Cut tomatoes into 1/4 inch thick slices. Arrange them in rows with tofu and fresh basil leaves between slices.
4. Drizzle with extra virgin olive oil, serve and enjoy : )
