Ah, summer, beautiful summer! If there is anything that can make our two monkeys totally happy, this is the super duper homemade ice cream : ) OK, I have to admit that I’m totally obsessed with this incredible summer bliss too : ) As you know, we’re currently living in Thailand, which gives us the great chance to experiment with the blender and enjoy fantastic tropical ice cream flavors. Some of our favorite recipes are with mango, pineapple and pink dragon fruit, but this creamy Vegan Coconut Banana Ice Cream has been a blast too!
Easy Vegan Coconut Banana Ice Cream (Dairy-Free, Sugar-Free)
Can you imagine that all you need for this creamy homemade goodness is frozen ripe bananas and coconut milk? Oh, yes! So simple and easy! Place them in a blender, add 1/2 teaspoon pure vanilla extract and turn on the magical button. After a few minutes you will have a soft and creamy coconut banana mixture with a heavenly good taste. Freeze it for at least 1-2 hours and then enjoy this pure summer delight!
Ingredients for Vegan Coconut Banana Ice Cream (Dairy-Free, Sugar-Free)
4 ripe bananas, sliced and frozen
50 ml coconut milk
1/2 tsp. pure vanilla extract
Instructions for Vegan Coconut Banana Ice Cream (Dairy-Free, Sugar-Free)
1. Place all ingredients in a high powered blender and process until completely smooth.
2. Transfer the dreamy coconut banana mixture to a container and freeze for at least 1-2 hours.
3. Serve this gluten-free ice cream heaven, topped with sesame seeds, raw nuts, shredded coconut, fresh fruits or dried berries.
