Watermelon Coconut Popsicles: Vegan, Dairy-Free
All you need for these awesome pops is sweet watermelon, a can of coconut milk and medjool dates. I usually top them with vegan chocolate and shredded coconut and the result is absolutely fantastic.

Ingredients for Watermelon Coconut Popsicles:
2 cups cubed watermelon
1 can full fat coconut milk
5-6 medjool dates, pitted
1 sachet of vanilla sugar

2. Pour the mixture into popsicle molds with sticks and freeze for 4-5 hours or even longer. If you want to make the chocolate topping, first put some grated chocolate on the bottom of the mold.
3. Once they are frozen, top these yummy beauties with shredded coconut.
4. Serve and eat immediately.
