Hey, dear friends! Today’s summer inspiration are these insanely delicious Watermelon Coconut Popsicles! They are vegan, diary-free and totally sugar-free. I made them last week for our two monkeys and they both just loved them!
Homemade pops are a total hit in the summer. These yummy kid-friendly beauties are the perfect healthy and refreshing treats to keep your monkeys cool in the summer heat. And the best part is that it’s so much fun making them, especially when the kids help you : )
All you need for these awesome Watermelon Coconut Popsicles is sweet watermelon, a can of coconut milk and dates. I topped them with vegan chocolate and shredded coconut and the result was absolutely fantastic! This is a lovely diary-free summer dessert, perfect for the whole family.
Ingredients for Watermelon Coconut Popsicles:
2 cups cubed watermelon
1 can full fat coconut milk
5-6 medjipool dates, pitted
1 sashet of vanilla sugar
vegan chocolate (optional)
shredded coconut (optional)
Instructions for Watermelon Coconut Popsicles:
2. Pour the mixture into popsicle molds with sticks and freeze for 4-5 hours or even longer. If you want to make the chocolate topping, put some grated chocolate on the bottom of the mold.
3. Once they are frozen, top these yummy Watermelon Coconut popsicles with shredded coconut.
