Hey, loves : ) 2018 is right around the corner! Wow, what an emotional year we’ve had! I still can’t believe that we finally made our wildest dream of living in Southeast Asia come true : ) The last three mounts in Thailand have been absolutely magical. A pure happiness! We’re enjoying the quite and peaceful life that we’ve been dreaming of for such a long time. All year round sun, stunning nature and beaches, lovely people and a great variety of amazing local fruits and veggies… This is what we’ve desperately missed in Europe. And since we’re living in a tropical heaven, how about celebrating the end of the year with this yummy Papaya & Pineapple Coconut Chia Pudding? : ) A healthy, nutritious and crazy delicious treat, absolutely prefect for breakfast, quick afternoon snack or vegan dessert! Furthermore, it’s an incredible way to get the whole family (especially the kiddos) to eat chia. Hooray!
I know you’ve probably heard so much about the health benefits of chia seeds. Anyway, let me tell you a few words about this amazing ancient superfood. Did you know, that chia is originally grown in Mexico and means “strength” in the Mayan language? In fact, those small seeds were referred as the “runners food”. Packed with energy-boosting power, the warriors would use chia as a fuel while running long distance and participating in battles. Chia seeds helped them staying hydrated and full of energy. In the past few years, chia has become one of the most popular superfoods in the health community. Rich in omega 3-fats, fiber, protein, vitamins and minerals, this magical superfood is a versatile ingredient to smoothies, salads, healthy desserts and snacks. Ingredients for Papaya & Pineapple Coconut Chia Pudding:
Serves 2
1 cup coconut milk
4 tbsp. chia seeds
1 tsp. agave or maple syrup
1/2 tsp. vanilla extract
fresh pineapple & ripe papaya
Instructions for Papaya & Pineapple Coconut Chia Pudding:
1. Mix together the coconut milk, chia seeds, agave/maple syrup and vanilla extract in a jar or bowl.
2. Stir occasionally. Refrigerate for at least 1 hour or overnight.
4. Remove the chia pudding from the fridge and prepare jars or glasses for serving.
5. Cut papaya and pineapple into cubes/ slices.
6. Garnish the chia pudding with the tropical fruits.
7. Serve and enjoy this tropical chia pudding deliciousness!
