These yummy raw date energy bars are one of our favorite afternoon treats at home! They are vegan, gluten-free, dairy-free and most important totally kid-friendly : ) The perfect healthy snack that will keep you fresh and energized throughout the day.
All you need for these homemade raw beauties are dates, cashews, dried goji berries and chia seeds. As I’ve already mentioned before, we are sooo lucky to have homegrown goji berries, picked from my parents-in-law lovely garden. Dried in the warm sun, these little treasures are the perfect addition to cookies, date energy bars, smoothie bowls or cereals.
Furthermore, we love preparing these nutritious and energizing kid-friendly snacks before we go hiking with our two monkeys. They are also a beloved afternoon treat during our summer camping and kayaking adventures : )

Ingredients for Homemade date energy bars (vegan, gluten-free, dairy-free):
2 cups soft dates, pitted
1/2 cup raw cashews
1/2 cup dried goji berries
1/2 cup shredded coconut
1/4 chia seeds
Instructions for Homemade date energy bars (vegan, gluten-free, dairy-free):
1. Place dates, cashews, goji berries, shredded coconut and chia seeds in a food processor. Blend for about 1 – 2 minutes until the mixture is finely chopped.
2. Spread the mixture on a baking paper and cut it into equal bars.
3. Enjoy these yummy homemade gems with your family.
