Hey, dear friends! Smoothie bowls are perfect to start your day in a beautiful and positive way : ) So, today I’m sharing with you this healthy and super delicious kale smoothie bowl, topped with organic apples, shredded coconut and homegrown goji berries and blueberries. A green gorgeousness that will make you feel just fabulous!

The best part about smoothie bowls is that you can create the yummiest and the most beautiful topping in the world by yourself : ) Our 4-year old boy (who is a huge smoothie lover) usually decides how to decorate our smoothie bowls. Thankfully, our freezer is stocked with homegrown goji berries and blueberries, picked from grandma’s and grandpa’s lovely garden. They were the perfect topping of our smoothies this loooong and super cold winter.

Ingredients for Healthy and delicious kale smoothie bowl:
Serves 2
2 ripe bananas, peeled and roughly chopped
1 organic apple, roughly chopped
2 cups tightly packed organic kale leaves
10 medjool dates, pitted
2 tbsp. chia seeds, soaked
coconut water (or filtered water) to adjust the consistency

For the topping
sliced organic apple 
frozen goji berries and blueberries
shredded coconut

Instructions for Healthy and delicious kale smoothie bowl:

1. Combine bananas, apples, kale leaves and dates in a blender. Pour the coconut water (or filtered water) and blend until smooth.
2. Add chia seeds and blend for another 30 seconds.
3. Pour the mixture in bowls. Top with apple slices, shredded coconut and frozen goji berries & blueberries. If you don’t have any berries in the fridge, create your own delicious topping according to your taste. I’m sure it will be insanely tasty : )
