Hey, guys! It’s time for a fancy avocado toast : ) Yay! This legendary snack has become the most Instagrammed dish for a reason. It’s healthy, quick and sooo incredibly delicious. The perfect snack, lunch or dinner, especially when you don’t have enough time to prepare something in the kitchen.
There are plenty of gorgeous and creative ways to fancy up your avocado toast. Besides the classic version (with lemon juice, salt and pepper), we usually make the topping with sprouts and some yummy seasonal veggies. So, here’s my autumn version for you: Avocado toast, topped with red cabbage, onion and alfalfa sprouts. Mmm, it tastes sooo amazingly good! Since our daughter has never been an avocado lover, I usually make this quick snack for our little boy, when she is at school. And this 3-year old monkey is always over the moon with happiness : )
Speaking of sprouts, I must admit that our family is a huge fan of DIY home sprouting. In fact, growing sprouts has been a lovely family ritual for the last three years. Why it is so important to include sprouts to оur diet? As you already might know, these little treasures have uncountable nutritional and health benefits. They are such a great source of vitamins, enzymes and minerals. But in order to keep all of their amazing benefits, we have to eat them raw. Therefore, we usually eat them as a topping of salad, avocado toast (or cashew cheese toast) and warm dish (on the very last minute before serving). Some of our favorite organic sprout seeds are alfalfa, radish, broccoli, mung beans, lentils etc. And what makes me really happy is that both of our kiddos just love eating sprouts! 🙂
Ingredients for Quick & fancy avocado toast with red cabbage, onion and alfalfa sprouts:
Serves 2
1 ripe avocado
sourdough bread
2 tsp. freshly squeezed lemon juice
red cabbage, chopped
1 onion, sliced
alfalfa sprouts
Himalayan pink salt to taste
Instructions for Quick & fancy avocado toast with red cabbage, onion and alfalfa sprouts:
1. Toast the sourdough bread slices.
2. Mash the avocado in a small bowl. Add 2 tsp. freshly squeezed lemon juice and season with Himalayan pink salt to taste.
3. Spread the avocado mixture on each slice of bread. Top with red cabbage, onion rings and alfalfa sprouts.
