Hello, beautiful people! As huge nature lovers, we just LOVE setting up outdoor family picnics all year round. And summer is the best time to enjoy magical evening picnics on the beach. So, let me share with you one of the most beautiful and serene family gatherings we were lucky to have last summer. Gorgeous picnic setting, simple homemade vegan food and romantic atmosphere only a few steps of the sea… That was pure happiness! : )
For our evening beach picnic I made some light summer appetizers, prepared with heavenly delicious veggies and herbs from my Grandma’s garden. I already shared with you how happy I am with her amazing garden! Although she is 89 years old, she still grows the most fruitful and delicious vegetables, I’ve ever tasted in my life. And since our little tribe is completely in LOVE with her red and juicy giant tomatoes, I decided to prepare yummy Tofu Tomato Bruschetta with fresh basil leaves from the garden and raw red and green peppers, stuffed with tomatoes, cucumbers, avocado and red onion. We had some super sweet melon too, which is one of our beloved summer fruit treasures. So simple, so delicious!
Ingredients for Tofu Tomato Bruschetta:
1 sourdough baguette, thinly sliced
1-2 tomatoes, chopped
1 block firm tofu, cut into cubes (Toni makes the most delicious tofu in the world, so I hope to share with you his amazing recipe soon : )
1-2 cloves of garlic, crushed
fresh basil leaves, finely chopped
1 tbsp. extra virgin olive oil
Himalayan pink salt to taste
Instructions for Tofu Tomato Bruschetta:
1. Slice the sourdough baguette and toast the slices in the oven.
2. Combine all ingredients in a bowl. Drizzle with extra virgin olive oil, season with Himalayan salt to taste and and gently stir.
3. Top the sourdough baguette slices with this heavenly delicious mixture.
4. Serve on a plate and enjoy these wonderful vegan appetizers.
Tofu Tomato Bruschetta is so simple, easy and refreshing summer appetizer! It’s absolutely perfect for a light lunch and dinner, outdoor picnic & party with family and friends.
Tips: If you want to include these gorgeous vegan beauties to your picnic menu, put the tofu tomato mixture in a jar or box, and top the bread slices just before you serve them.
